The Southern Sky Cheese Company was founded by Rod Wyker in Launceston Tasmania in 2012. It was born from his love and passion for specialty dairy products and Tasmanian produce.
Rod is a recognised leader and educator in specialty cheese and foods in Australia, with a cheese making career spanning more than 30 years. He has designed and implemented strategies for the development, production, and packaging of many of Australia’s leading specialty cheese brands.
Rod launched Southern Sky Cheese company in 2012, with a supply contract to a Sydney based distributor and locally starting with a tiny range of layered bries and club cheddars sold at the Launceston Harvest Market, where he was one of the first stallholders.
This and other markets have allowed him to gauge product appeal with new lines.
Over the past six years he has expanded the brand, added a range of the delicious layered brie products and developed an in-house process for the production of traditional halloumi.
Today, the Southern Sky Cheese range includes more than 30 products - more than 20 of which are available online - ranging from the original Vintage Club Cheddar, through the very popular layered Bries, two styles of Halloumi and Persian Fettas. Blue Vein and Alpine Styles round off his Fromagerie's (Market cheese shop) offerings..
Aside from sales at markets and to a range of Tasmanian restaurants and cafes, Southern Sky also sells to independent supermarkets in Tasmania,Victoria, Queensland and South Australia.
