Tasmanian Raclette, with its a mild nutty, milky flavor, is a lovely example of traditional semi-hard Swiss/French Alpine style cheese. The surface of the cheese is treated during maturation, enhancing the flavour development and ripening.
Raclette is traditionally melted on a raclette burner and scraped over boiled potatoes, pickles and lean meats.
